These easy soft, caramelised honey glazed carrots make a delicious sweet side alongside many main dishes such as our Moroccan Lamb recipe.

Ingredients

• 450g Carrots, peeled and chopped into 1.5 inch batons
• 2 tbsp Honey
• 2 Garlic cloves, crushed
• 1 tbsp Butter, melted
• 1 tsp Olive Oil
• 1/4 tsp Cayenne Pepper
• 1/4 tsp Salt
• Pinch Black Pepper

Instructions

1. Preheat your oven to 220C.
2. In a bowl, toss the Carrots with Honey, Garlic, Butter, Oil, Cayenne Pepper, Salt and Black Pepper.
3. Add the Carrots to an oven tray and spread them out.
4. Roast for 20-25 minutes, tossing halfway through.

Storage

Place leftovers in an airtight container and store for up to 3 days in the fridge.

Variations

Add 1/4 tsp Cinnamon and ground Ginger to the Carrots.
