Pumpkin wedges are a delicious and versatile way to enjoy the earthy sweetness of pumpkin. Roasted to perfection, these wedges become caramelised on the outside while remaining tender on the inside. They're perfect as a savoury side dish and the Harissa marinade and Garlicky Tahini. Dressing complements the Pumpkin perfectly.
Ingredients (serves 4)
- 1 Kg Pumpkin, peeled and cut into wedges
Marinade
- 1 heaped tsp Harissa Paste
- 1 tsp Smoked Paprika Powder
- 1 tsp Coriander Powder
- Salt and Black Pepper
- 3 tbsp Oil
Green Tahini Garlic Dressing
- 50g Tahini Paste
- 2 tbsp Lemon Juice
- Pinch Cumin Seeds
- 1/2 tsp Salt
- 50g Coriander Leaves
- 2 cloves Garlic
Instructions
- Preheat the oven to gas 6, 200C, 395 f.
- Add the Pumpkin to a bowl with the remaining ingredients and rub the marinade into the Pumpkin.Place in a lined oven tray. Roast for 25-30 minutes.
- Make the dressing by combining all the ingredients for the Dressing in a blender and pulse till combined.
- Place Pumpkin wedges on a platter and drizzle over the dressing.
Variations
Add some chopped Feta to the wedges.
