This Homemade Chicken soup using leftover chicken is delicious and quick to make. This hearty, nutritious soup is thickened and enhanced with Roohts Talbina Flour and is great for an easy lunch.
Ingredients
- 1 - 2 tbsp Oil
- 1 Onion, diced
- 1 tsp Garlic Paste
- 1/4 cup Plum Tomato tin, pureed
- 1 large Carrot, peeled and diced
- 200g leftover Chicken, chopped
- 1 L, Chicken Stock
- 4 tbsp Oats
- 2 tbsp Talbina
- Salt and Pepper
Instructions
- Add Oil to a pot with the Onions and cook till golden on medium high heat.
- Stir in Garlic paste and cook for 1 minute over low heat.
- Pour in the Tomato and simmer for 3 - 4 minutes.
- Add Carrots and Chicken. Saute for a minute.
- Pour in stock. Cook covered on medium low for 5 minutes.
- Add Oats, Talbina and Salt and Pepper and cook for 5 more minutes over low heat.
Storage
Store leftovers in an airtight container in the fridge for up to 3 days.
Variations
Add your favourite vegetables such as Corn, Leek, Broccoli, Peas.
