This easy and flavourful one-pot Indian Chicken and Rice dish is a comforting, and convenient meal that brings together fragrant basmati rice, tender chicken, and a mix of warm spices in a single pot. Cooking everything in one pot allows the rice to soak up the rich flavours of the marinated Chicken and Spices.
Ingredients (serves 4)
Chicken Marinade
- 1 whole Chicken, skin removed, cut into 12 pieces
- 1 tbsp Garlic Paste
- 1 tbsp Ginger Paste
- 1 tsp Cumin Powder
- 1/2 tsp Turmeric Powder
- 1 tsp Coriander Powder
- 1/2 - 1 tsp Chilli Powder
- 1 1/2 tsp Garam Masala Powder
- 1 tbsp Lemon Juice
- Pinch Salt
- 2 tbsp Oil
Rice
- 1 Onion, diced
- 1/2 tsp Cumin Powder
- 1/2 tsp Coriander Powder
- 1/2 tsp Chilli Powder
- 2 cup Rice, washed and drained
- 4 cups Stock or Water
- 2 tsp Salt
Instructions
- Marinade the Chicken in all the ingredients listed under Chicken marinade apart from the Oil and set aside for 15 - 20 minutes.
- Add Oil to a large non stick pan and sear Chicken for 5 minutes per side. Remove to a plate.
- Add Onions to the same pan and cook till golden brown.
- Stir in Rice, Cumin, Coriander and Red Chilli Powder.
- Add Stock, then bring to a simmer.
- Add the Chicken on top.
- Add a lid on top of the pot.
- Cover cooked on low heat for 20 - 30 minutes.
