One Pot Indian Chicken and Rice Recipe

This easy and flavourful one-pot Indian Chicken and Rice dish is a comforting, and convenient meal that brings together fragrant basmati rice, tender chicken, and a mix of warm spices in a single pot. Cooking everything in one pot allows the rice to soak up the rich flavours of the marinated Chicken and Spices.

Ingredients (serves 4)

Chicken Marinade

  • 1 whole Chicken, skin removed, cut into 12 pieces
  • 1 tbsp Garlic Paste
  • 1 tbsp Ginger Paste
  • 1 tsp Cumin Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1/2 - 1 tsp Chilli Powder
  • 1 1/2 tsp Garam Masala Powder
  • 1 tbsp Lemon Juice
  • Pinch Salt
  • 2 tbsp Oil

Rice

  • 1 Onion, diced
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Coriander Powder
  • 1/2 tsp Chilli Powder
  • 2 cup Rice, washed and drained
  • 4 cups Stock or Water
  • 2 tsp Salt

Instructions

  1. Marinade the Chicken in all the ingredients listed under Chicken marinade apart from the Oil and set aside for 15 - 20 minutes.
  2. Add Oil to a large non stick pan and sear Chicken for 5 minutes per side. Remove to a plate.
  3. Add Onions to the same pan and cook till golden brown.
  4. Stir in Rice, Cumin, Coriander and Red Chilli Powder.
  5. Add Stock, then bring to a simmer.
  6. Add the Chicken on top.
  7. Add a lid on top of the pot.
  8. Cover cooked on low heat for 20 - 30 minutes.
