Originally created in Texas, this Salad features a mix of Beans, Corn, Tomatoes, Peppers and Onions, all tossed in a tangy, zesty dressing. Often served with tortilla chips or as a standalone side, cowboy caviar is an easy to make and versatile salad that is perfect for barbecues, picnics, and casual gatherings.
Ingredients (Serves 4)
- 1 Red Pepper, diced
- 1 Green Pepper, diced
- 1/2 Red Onion, diced
- 400g mixed Beans
- 300g baby Plum Tomatoes, diced
- 400g Sweetcorn
- 3 tbsp Coriander leaves, chopped finely
Dressing
- 85g Olive Oil
- 2 tbsp White Vinegar
- 2 tbsp Roohts Cajun Seasoning
- 3 tbsp Light Brown Sugar
- 1/2 tsp Garlic Powder
- 1 Lemon, juice only
- Salt and Pepper
Instructions
- Add all the chopped Vegetables to a bowl.
- Whisk together the dressing ingredients in a small bowl and pour over the Salad. Toss to combine.
Variations
Add other Vegetables such as chopped Avocado and Black Olive.
Use Black Beans instead of Mixed Beans.
Add cubed Feta.
Serving Suggestions
Serve with Nachos or Pitta Chips.
