An all in one Chicken and Chickpea Traybake with Moroccan flavours. An easy and delicious recipe to make mid week!
Ingredients
- 4 Chicken Thighs, Skin on
- 3 tbsp Oil
- 1 tbsp Roohts Moroccan Recipe Mix
- 200g tinned Tomatoes, pureed
- 100ml Double Cream
- 400g Chickpea tin, drained
Instructions
Preheat oven to 200 C/400 F/Gas Mark 6.
Marinade Chicken Thighs in 1 tbsp Oil and Moroccan Recipe Mix.
Add Tomatoes, and Cream to a large baking tin and mix to combine.
Stir in the Chickpea and lay the Chicken Thighs on top.
Bake for 40 - 45 minutes or until Chicken is cooked through.
Variations
Add your favourite Veggies such as baby Potatoes, Peppers, Broccoli, Cauliflower or Root Vegetables.
Serving Suggestion
Serve with Rice or Flatbreads.
Storage
Store leftovers in an airtight container in the fridge for up to 3 days.
