In this Recipe we combine Roohts Chicken Fry Mix with our Cajun seasoning to create a delicious meal. Serve with a Chilli Honey Sauce for the ultimate treat.
Ingredients (Serves 4)
- 2 lb Boneless, Skinless Chicken Breasts cut into 1 inch chunks
- 1 1/2 tbsp Cajun Seasoning
- 250g Roohts Chicken Fry Mix
- 2 Eggs, beaten
- Cooking Oil for frying
- Sauce:
- 4 tbsp Mayonnaise
- 1 tbsp Honey
- 3 tbsp Hot Sauce
Instructions
- Dip the chicken into beaten eggs.
- Add Chicken Coating to a plate and stir in Cajun Seasoning.
- Dredge each piece of chicken in flour, ensuring it’s evenly coated.
- Heat cooking oil in a deep wok or deep fryer to about 175-190C.
- Fry the chicken until golden brown and cooked through, usually 3 - 4 minutes per side depending on the thickness of the chicken. Make sure the internal temperature reaches 74°C.
- Whisk together the ingredients for the sauce in a small bowl and serve alongside the Chicken.
Storage
Place leftovers in an airtight container and store for up to 3 days in the fridge.
Variations
Use other seasonings in place of the Cajun seasoning, such as Roohts Portuguese or Peri Peri Seasoning.
