Ingredients (Serves 4 as a side)
Salad
- 1 heart Romaine, chopped
- 1/2 Red Onion, sliced
- 1/2 cup baby PlumTomatoes, chopped in half
- 1/2 Cucumber, cut into half moons
- 1/2 cup Chickpeas from a tin, drained and rinsed
- 1/4 cup Kalamata Olives
- 50g Feta, crumbled
Dressing
- 1 Garlic Clove, crushed
- 1/2 tsp Dry Oregano
- 1/4 tsp Cayenne Pepper
- 2 tbsp Lemon Juice
- 1 1/2 tbsp White Vinegar
- 2 tbsp Extra Virgin Olive Oil
- 1/4 tsp Dijon Mustard
- 1/8 tsp Salt
- Good Pinch of Black Pepper
Instructions
- Chop all the Vegetables and add them to a bowl.
- Add all the ingredients for the dressing to a bowl and whisk together.
- Pour over the chopped Vegetables and mix to combine.
Storage
This Salad will keep well in an airtight container for 2 days. If the dressing is tired separately, it will last for up to 4 days.
