An all in one Lebanese Tray bake with Chicken, Vegetable and Rice.
Easy to make and convenient for a busy mid week meal.
Ingredients
- 2 tbsp Lebanese Seasoning Mix
- 2 tbsp Vegetable Oil
- 1 large Red Onion, sliced
- 1 large Potato, cut into thin wedges
- 2 Peppers, sliced into strips
- Handful Cherry Tomatoes
- 500g Chicken, cut into small pieces
- 250g pack pre-cooked White Rice
Instructions
Step 1
Preheat the oven to 220 C, Gas Mark 7.
Step 2
In a large bowl, stir the Lebanese Seasoning mix into the oil, then toss the Onions, Potato, Peppers, Tomatoes and Chicken in to coat.
Place in a large baking tin and roast for 30 - 40 minutes.
Step 3
Stir in the packet Rice and return to the oven to cook for another 5 minutes.
Variations
Use Vegetables of your choice.
Add any variety of pre cooked Rice.
Tips
The length of time that the Chicken needs to cook, will depend on the size of the Chicken pieces.
Check to see that the Chicken is cooked through from the 30 minute mark.
Storage
Store leftovers in an airtight container for up to 3 days.
