This Pear and Berry Crumble that combines the natural sweetness of juicy pears with the tangy burst of fresh berries, all topped with a golden, buttery crumble with added Talbina. This comforting treat is perfect for Autumn. Serve it warm, with custard and a scoop of vanilla ice cream.
Ingredients (Serves 6 - 8)
Fruit Mixture
- 300g frozen mixed Berries
- 5 Pears, peeled and chopped into 1 inch pieces
- 1 tbsp Cornflour
- 75g Light Brown Sugar
- 1 tsp ground Cinnamon
- 1/4 tsp ground Cardamom
Crumble
- 350g Plain Flour
- 25g Talbina
- 100g Light Brown Sugar
- 1 tsp ground Cinnamon
- 1/2 tsp ground Ginger
- Pinch Salt
- 250g cold Butter, cubed
Instructions
- Add Berries and Pears to a 9 inch baking dish.
- Scatter over Cornflour, Brown Sugar, Cinnamon and Cardamom and mix together.
- To prepare the crumble topping, place the Flour, Talbina, Sugar in a large bowl. Add Ground Cinnamon, Ginger and Salt.
- Add the pieces of Butter.
- Combine Flour with other ingredients by rubbing them together using your hands until large breadcrumbs are formed.
- Sprinkle the crumble in an even layer on top of the fruit. Do not press down.
- Bake for 45 minutes or until the buttery crumble is golden brown and the pears have softened.
- Let the crumble cool a little and then serve in individual bowls whilst still hot with custard, a scoop of ice cream or cream.
Variations
Use Apples in place of Pear.
